Snazzy Backup lets you pick files and folders to backup and creates a zip file for you. You can filter the files you don't want to backup based on complex conditions. It allows for incremental backups. You can save all your settings to a file. It supports command line execution for automatic scheduled backups. It has a nice Windows installer, but it can be used with other operating systems. You can insert the current date (or any part of it) into the zip file name or log file name. You can specify the compression ratio and even the thread priority that runs the backup process. Free and open source!
